Poricha Kunjan Kozhi Biryani (Biryani with Tender Chicken Fry)
Ingredients for Poricha Kunjan Kozhi Biryani (Biryani with Tender Chicken Fry):
1. Quail (Kada Kozhi) – 3
2. Kaima rice – 1 kg
3. Onions – 1 kg
4. Ginger – 50 gm
5.Garlic- 50 gm
6. Green chillies – 50 gm
7. Tomato – 1 kg
8. Coriander leaves and mint leaves – As required
9. Dalda – 100 milli
10. Ghee – 50 milli
11. Tamarind – ½ tsp
12. Coriander powder- ½ tsp
13. Chilli powder- ½ tsp
14. Curd – 1 cup
15. Fennel seeds – ½ tsp
How to prepare Poricha Kunjan Kozhi Biryani (Biryani with Tender Chicken Fry)?
1. Soak rice for half an hour in water.
2. Later cook the rice in 1.5 litre water using dum method till water content is fully evaporated.
3. Add salt, dalda and ghee as required.
4. Heat ghee in a pan and sauté onions.
5. Add tomatoes, chilli powder and coriander powder and sauté well.
6. Add crushed green chillies, garlic and ginger, and also curd and sauté again.
7. Marinate quails using a little masala powder and deep fry in hot oil in another pan.
8. Add this chicken to masala and mix well.
9. Transfer the masala along with chicken to a thick bottomed vessel.
10. Spread cooked rice on its top.
11. Dum this vessel in red charcoal (without flames) for 20 minutes and serve.
