Sweet Potato Fried (Madhura Kizhangu Porichathu)

Ingredients for Sweet Potato Fried (Madhura Kizhangu Porichathu):

1. Sweet potato – 2

2. Gram flour (besan) – 1 cup

3. Egg white – 2

4. Coconut oil – As required

5. Curry leaves and coriander leaves chopped – 2 or 3 stems

6. Salt – For taste

7. Cornflour – 2 table spoons

How to prepare Sweet Potato Fried (Madhura Kizhangu Porichathu)?

1. Peel of the skin of sweet potato and wash it well.

2. Chop sweet potatoes into fine thin round pieces.

3. Prepare a batter mixing gram flour, egg white, salt, cornflour and chopped curry leaves and coriander leaves.

4. Add a little water to adjust the consistency of the batter.

5. Heat oil in a frying pan.

6. Dip each sweet potato slice in the batter and deep fry in hot oil.

7. Your sweet potato fries should turn golden brown colour.

8. You can serve it as a 4 O’ clock snack, along with a cup of hot coffee.
