ivy gourd dishes

Ingredients for Kovakka Ajadeena:

1. Ivy gourd (Kovakka) – ¼ kg

2. Red chillies – 3

    Coriander seeds – 1 big spoon

    Black pepper – 1 small spoon

    Cumin seeds – ½ small spoon

    Fennel seeds – ¼ small spoon

3. Coconut scrapped – 1

4. Oil – 2 big spoons

5. Mustard – ¼ small spoon

    Curry leaves – 2 stems

    Onions – 1, chopped fine

6. Turmeric powder – ¼ small spoon

    Salt – For taste

7. Tamarind juice – 1 big spoon

How to prepare Kovakka Ajadeena?

1. Split ivy gourd lengthwise into 4 pieces.

2. Slightly heat ingredients no: 2 and blend once in a mixer.

3. Blend coconut in a mixer. Never finely grind it.

4. Heat oil and sauté ingredients no: 5.

5. Add ivy gourd, powdered masalas, salt and turmeric powder, and cook in low flame.

6. When it’s half done, add coconut, tamarind juice and a little water.

7. Stir the contents well and cook for a few more minutes in low flame.
