Jackfruit Pudding with Caramelized Nuts recipe

Ingredients for Jackfruit Pudding with Caramelized Nuts:

  1. Sugar – ½ cup
  2. Grated coconut – ½ cup
    Jackfruit (firm, not overly ripe) – 1½ cups, chopped
  3. Cashew nuts, chopped and roasted – ¼ cup
  4. Condensed milk – 1 tin
    Milk – 2 tins
  5. Gelatine – 1 tablespoon
  6. Caramelized nuts – For garnishing

How to prepare Jackfruit Pudding with Caramelized Nuts?

  1. Heat a pan and melt the sugar.
  2. Add grated coconut and chopped jackfruit, then cook on low heat while stirring well.
  3. Once all the water evaporates, add roasted cashew nuts and mix thoroughly.
  4. Spread this mixture as the first layer in a pudding dish.
  5. Combine milk and condensed milk, then add melted gelatine and mix well.
  6. Pour this mixture over the jackfruit layer and refrigerate until set.
  7. Garnish with caramelized nuts and serve.
