Halbai

Halbai is a traditional Udupi sweet dish served as 4 o’ clock snack. It is also prepared at homes during festival seasons.

Ingredients for Halbai:

1. Raw rice – 2 cups

2. Jaggery powdered – 3 cups

3. Coconut scrapped – 1 cup

4. Cardamom powder – 1 small spoon

5. Salt – A pinch

How to prepare Halbai?

1. Add 2 cups of water to rice and soak for half an hour.

2. Strain excess water from rice and grind it with conut and salt.

3. The batter should be thinner than dosa batter.

4. Heat jaggery in a frying pan.

5. When it melts completely, add the batter to it and keep stirring.

6. When it thickens, add cardamom powder and mix it well.

7. Put off the flame.

8. Grease a plate and transfer the contents to it.

9. Spread it well.

10. When it cools, cut into desired shapes and serve.
