Firni (also spelled Phirni, Firnee, or Kheer Firni) is a traditional North Indian sweet pudding made from ground rice, milk, and sugar. It is very similar to kheer, but the texture is smoother and thicker.  The rice is powdered instead of being used whole, which makes it different from Kheer dishes. They are different from Payasams & Puddings too. 

This royal dish, belonging to Mughlai Cuisine, is strongly associated with Hyderabadi, North Indian, Awadhi, Kashmiri, and Pakistani Cuisines. It is a staple dessert in Muslim households across the Indian subcontinent, especially during festival occasions. The dish is traditionally set and served in small clay pots (mitti kulhads), and always refrigerated before serving, which gives it a rich, dense finish. Here is a classicand simplest recipe. Firni - sweet dessert recipe

Ingredients for Firni:

  1. Fat milk – 2 cups
  2. Ghee – 1 big spoon
  3. Basmati rice – 100 gm
  4. Sugar – 150 gm
    Saffron – A pinch
    Cardamom powder – 1 small spoon
  5. Almonds – 8-10, chopped
    Pista – 8-10, chopped
    Cashews – 8-10, chopped

How to prepare Firni?

  1. Boil milk for 15 minutes.
  2. Heat ghee in a pan and add basmati rice.
  3. Fry rice until it turns golden brown. Allow it to cool down.
  4. Coarse-grind the rice and add it to boiling water.
  5. Cook rice for 15 minutes. Keep stirring.
  6. When the contents almost thicken, add ingredients set no: 4.
  7. Keep stirring for 5 more minutes and turn off the flame.
  8.  Allow the dish to cool down completely, and then place it in the refrigerator for half an hour.
  9.  Transfer your dessert into serving bowls, decorate with a few nuts, and serve in mitti kulhads.
