easy veg curry

Ingredients for Easy Veg Curry:

1. Oil – 1 big spoon

2. White chickpeas cooked and strained excess water – 1.5 cups

    Coriander powder – 2 small spoons

    Pepper powder – 1 small spoon

    Garam masala powder – 1 small spoon

    Turmeric powder – 1 small spoon

3. Coconut milk – 400 milli

    Tomato chopped fine – 400 milli

    Lemon juice – 1.5 – 2 big spoons

    Salt – For taste

4. Palak/Methi leaves – 3 cups

5. Coriander leaves chopped – 2 big spoons

How to prepare Easy Veg Curry?

1. Heat oil in a pan and sauté ingredients no: 2 for 2-3 minutes.

2. Add ingredients no: 3 and allow the curry to boil.

3. Reduce the flame and cook chickpeas in low flame for 5-10 minutes.

4. Stir occasionally.

5. Add Palak/Methi leaves, check salt, pepper and lemon juice.

6. If needed extra, add them.

7. When it’s well cooked, add chopped coriander leaves and serve hot with chapati or rice.
