Tharav Roast - Duck Pepper Roast with Onion Fry

Ingredients for Duck Pepper Roast with Onion Fry:

  1. Duck with skin – 1 kg 
  2. Onion – 3 medium, chopped
    Green chilli – 4 to 5, slit lengthwise
    Ginger – 2-inch piece, sliced lengthwise
    Curry leaves – A handful
    Water – 2 cups 
  3. Coconut oil – As needed 
  4. Pepper powder – 1 big spoon
    Turmeric powder – ¾ small spoon
    Coriander powder – 1½ big spoons
    Garam masala powder – ¾ small spoon
    Shallots – ½ cup
    Garlic – 1 bulb 
  5. Onion – 1 large, chopped 
  6. Tomato sauce – 1 big spoon 
  7. Potato – Sliced round and fried, for garnishing 

How to prepare Duck Pepper Roast with Onion Fry?

  1. Clean the duck well, cut it into pieces, and cook it along with the ingredients listed under section 2. 
  2. Once cooked, separate the pieces from the gravy and fry them in hot coconut oil until light brown. Keep aside. 
  3. Remove the green chillies from the gravy and mash the remaining onions well. 
  4. Grind the ingredients listed under section 4 into a smooth paste and set aside. 
  5.  Fry the onion listed under section 5 in coconut oil until golden brown and crush it lightly. Keep aside. 
  6. Remove a little oil from the pan and roast the ground paste in the remaining oil until the raw smell disappears and it turns aromatic. 
  7. Add the cooked gravy to this mixture and let it boil well. 
  8. Add the fried duck pieces, crushed fried onions, and tomato sauce. Boil until the gravy thickens to the desired consistency. 
  9. Garnish with fried potato slices and serve hot.
