Introduction
Coconut Fruit Nut Roll is a quick, no-bake sweet made with grated coconut, dry fruits, nuts, and natural sweeteners. Soft, chewy, and mildly crunchy, this easy dessert is perfect for festive platters, tea-time snacks, or healthy sweet cravings. With simple ingredients and minimal preparation, it’s an ideal homemade treat for all age groups. In this post, two methods of preparation are given. You can try both. It is a sugar-free or low-sugar dessert, with dates as the main ingredient and nuts such as almonds, cashews, pistachios, or walnuts added for crunch and richness.
This sweet snack is known by various names – Coconut Date Nut Roll, Khajur Roll, Date Nut Roll, or Khajur Barfi Roll, and belongs to the no-bake dish category. Coconut Fruit Nut Roll is a healthy, energy-boosting sweet snack popular in Indian home cooking, especially as a quick festive treat (Diwali, Christmas), or everyday munching.
Coconut Fruit Nut Roll – Recipe 1

Ingredients for Method 1:
- Coconut grated – 2 cups
Sugar – 1.5 cups
Water – 1 big spoon - Light food colour of your choice – 1 drop
Milk – 1 big spoon
Vanilla essence – ½ small spoon - Dates chopped fine – ½ cup
Cashews chopped fine – ½ cup
Milk powder – ½ cup
Preparation – Method 1
- Mix ingredients no: 1 in a pan and heat. Keep stirring.
- When it turns thin, thread-like and sticky, add ingredients no: 2.
- Mix the contents well and take from the flame.
- Add ingredients no: 3 and mix again.
- Transfer the contents to an aluminium foil, spread it and roll it into a log-like structure.
- Wrap the roll with aluminium foil and allow it to cool off completely.
- Remove the foil and slice the roll into 1-inch-thick pieces

Coconut Fruit Nut Roll – Recipe 2

Ingredients for Method 2 :
- Grated Coconut – 2 cups
Sugar – 1½ cups
Water – 2 teaspoons - Food Colour – A pinch
Milk – 2 teaspoons
Vanilla Essence – 1-2 drops - Chopped and Roasted Cashew Nuts – ½ cup
Finely Chopped Dates – ½ cup
Milk Powder – ½ cup
Preparation – Method 2
- Mix the first set of ingredients and set aside.
- Place this mixture in a thick-bottomed pan and cook well.
- When it reaches a thread-like consistency, add food colour mixed in milk and vanilla essence, then stir well.
- Remove from heat, add the third set of ingredients, mix thoroughly, and spread onto greased paper or aluminium foil, rolling into one-inch logs.
- Once cooled, remove the foil or paper and slice into pieces.
