Coco-Carrot Delight

Ingredients for Coco-Carrot Delight:

1. Butter – 1.5 big spoons

2. Grated carrot – 1 cup

3. Sugar – 1.5 big spoons

4. White chocolate – ½ cup, upto brim (85gms)

5. Scrapped coconut desiccated (by placing in oven to remove moisture) – ¾ cup + 2 big spoons

6. Cardamom powder – 1/2 small spoon

How to prepare Coco-Carrot Delight?

1. Heat butter in a pan and sauté carrot for 1 minute.

2. Add sugar and keep sauting till contents turn almost dry.

3. Put off the flame and add white chocolate.

4. Keep mixing till chocolate melts completely.

5. Add cardamom powder and ¾ cup coconut to above mixture.

6. Once it cools, place in refrigerator. The contents should turn thick & chilled.

7. Take them out and make small balls.

8. Wrap them in the remaining 2 big spoons of desiccated coconut.
