
Palak Puri & Chettinad Mutta Masala
Ingredients for Chettinad Egg Masala:
- Eggs – 5
- Tomato – 2
Garlic – 3 cloves
Ginger – ½ piece - Turmeric powder – ¼ tsp
- Curry leaves – 2 stalks
- Coriander leaves chopped – 1 tablespoon
- Lemon juice – 1 tsp
- Oil – 3 tablespoons
Mustard seeds – ½ tsp
Fennel seeds – ¼-1/2 tsp
Onions – 2
Green chillies – 3
For masala:
- Cloves – 3
Cinnamon – 1 piece
Red chillies – 4
Coriander seeds – 1 tablespoon
Cumin seeds – ½ tsp
Fennel seeds – 1 tsp
Pepper seeds – 1.5 tsp - Couscous – 1 tsp
- Coconut grated – 3 tablespoons
How to prepare Chettinad Egg Masala?
- Boil eggs and keep aside.
- Make a fine paste of ginger, garlic and tomato using a mixer.
- Heat a pan, and sauté ingredients no: 8.
- When a pleasant aroma comes out, add couscous and sauté for 1 minute.
- Add grated coconut and mix well.
- Take off from flame and allow the contents to cool.
- Make a fine paste.
- Heat a pan and add oil.
- Sputter mustard seeds and add fennel seeds.
- Add curry leaves, chopped onions and chopped green chillies.
- Sauté the contents and add salt.
- Add tomato paste and sauté till the raw smell goes out.
- Add coconut paste and turmeric powder.
- Reduce the flame and mix the contents well.
- Add boiled eggs, a little water and cook on a medium flame.
- When the curry boils well, take it off the flame.
- Garnish with coriander leaves and serve aside Palak Puri.
