Brinjal Baji (Vazhuthananga Baji)
Ingredients for Brinjal Baji (Vazhuthananga Baji):
1. Brinjal (Vazhuthananga/Kathirikka) – ¼ kg
2. Gram flour – 1 cup
Asafoetida powder – 1 small spoon
Chilli powder – 1 small spoon
Baking soda – ¼ small spoon
Salt – For taste
Cumin/sesame seeds – A pinch
3. Oil – 1 cup
How to prepare Brinjal Baji (Vazhuthananga Baji)?
1. Chop brinjal to very thin round slices.
2. Prepare batter using ingredients no: 2, adding a little water.
3. Marinate brinjal pieces using this batter.
4. Deep fry these brinjal pieces in hot oil.
