Baked Vegetable Terrine
Ingredients for Baked Vegetable Terrine:
1. Eggplant – 100 gm
Green zucchini – 100 gm
Capsicum – 100 gm
Carrot – 100 gm
Tomato – 100 gm
2. Olive oil – ½ small spoon
Garlic chopped fine – 1 big spoon
Basil leaves (Rama Tulsi) – 3
Crushed black pepper – 2 small spoons
Salt – For taste
For Cheese sauce:
3. Butter – 2 big spoons
4. Maida – 1 big spoon
5. Milk – 300 milli
6. Cheese grated – 75 gm
Salt – For taste
White pepper powder – 1 small spoon
Nutmeg powder – A pinch
Cream – 2 big spoons
7. Mozzarella cheese – As required
How to prepare Baked Vegetable Terrine?
1. Chop ingredients no: 1 into thin slices.
2. Make a fine paste of ingredients no: 2.
3. Marinate vegetables using this paste and refrigerate.
4. Later grill these vegetables using a tawa. Flip both sides.
5. To prepare cheese sauce, heat butter in a non-stick pan and cook maida for 2-3 minutes. Keep stirring.
6. Take of this mixture from flame and add milk slowly.
7. Mix the contents without forming lumps.
8. Place this mixture in flame and allow it to boil.
9. Add ingredients no: 6, mix well and put off the flame.
10. Arrange cooked vegetables as different layers.
11. Spread a thin layer of cheese sauce on the top of each layer, followed by a little mozzarella cheese.
12. ,You can set vegetables as different alternative layers.
13. Bake it in microwave oven for 3 minutes.
14. Once cooled you can cut it into desired shapes and serve.
