Baked Chicken with Orange Marmalade & Couscous (Orange Lemon Chicken)
Ingredients for Baked Chicken with Orange Marmalade & Couscous (Orange Lemon Chicken):
1. Chicken thighs – 6
2. Thyme – one bunch
3. Lemon – 1
4. Marmalade – 4 tablespoons
5. Orange – 2
6. Onion – 2, sliced lengthwise
7. Salt and black pepper – to taste
8. Couscous – 250 grams
Water – 250 ml
Chicken stock/chicken soup cube – 1
How to prepare Baked Chicken with Orange Marmalade & Couscous (Orange Lemon Chicken)?
1. Preheat the oven to 200°C.
2. Clean and pat dry the chicken thoroughly. Draw lines on it using a knife.
3. Press the thyme sprigs into the slits of the chicken.
4. Grate the lemon zest and squeeze out its juice. Mix both together.
5. Add two tablespoons of marmalade and the juice of one orange to this mixture. This will be the sauce.
6. Cut the remaining orange and both the onions lengthwise.
7. Arrange the chicken in an ovenproof dish and spread the orange and onion slices here and there.
8. Pour the prepared sauce over the chicken and season with salt and black pepper.
9. Bake the chicken in the preheated oven for 45 minutes until it is well-cooked and golden brown.
10. Prepare the couscous by mixing it with hot water and the chicken stock cube.
11. Take some juice from the baked chicken dish and mix it with the couscous for added flavor.
12. Place the couscous in the center of a serving dish.
13. Arrange the baked chicken thighs around it and garnish with thyme.
