Bhatkal Biryani recipe  

Ingredients for Bhatkal Biryani:

  1. Either chicken or mutton pieces – 1 kg(You can use minced mutton with bone as well)
  2. Kaima rice (Jeerakasala) – 1 kg
  3. Onion  sliced – 1kg
  4. Green chillies with stalk removed – 25-30
  5. Ginger-garlic paste – 4 spoons
  6. Tomato chopped – 300 gm
  7. Coriander leaves and mint leaves – as needed
  8. Garam masala powder – 1 tsp
  9. Lemon juice – from 1 or 2 lemons
  10. Salt – as needed
  11. Cinnamon – 3-inch piece
  12. Cloves – 4
  13. Cardamom – 4

Method of preparation of Bhatkal Biryani:

  1. Preheat the oven to 300 degrees Fahrenheit
  2. Heat oil and saute onion.
  3. Then add green chillies, ginger-garlic paste, tomato, coriander leaves, putina leaves and garam masala.
  4. Add chicken pieces along with lemon juice.
  5. Sauté well, close the lid and cook well. It should not be dry. It should have some gravy.
  6. Heat the ghee and fry the rice.
  7. Add double the quantity of water, salt, cinnamon, cloves and cardamom.
  8. Half-cook the rice and drain the water to prepare the rice for biryani.
  9. Take a vessel. Add a little rice. Spread a little coriander and mint leaves, and spread a little chicken/mutton on top.
  10. Again, spread rice and continue the same process to get a few layers of rice-chicken/mutton.
  11. Tightly seal the vessel and bake the biryani at 300 degrees Fahrenheit for 45 minutes.
