Kathirikka Raitha (Egg Plant Raitha)
Ingredients for Kathirikka Raitha (Egg Plant Raitha):
1. Violet Brinjal – 1/2 kg, sliced into thin rounds
2. Chilli powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Salt – 1/2 tsp
3. Oil – As required for frying
4. Thick curd – 2 cups
Salt – 1/2 tsp
Sugar – 1/2 tsp
5. Cumin – 1 tsp
Garlic (chopped) – 1 tbsp
Chilli powder – 1/4 tsp
How to prepare Kathirikka Raitha (Egg Plant Raitha)?
1. Mix the second set of ingredients and apply it to the brinjal slices. Let it sit for 30 minutes.
2. Once the brinjal starts to release water, fry it in hot oil until golden brown.
3. Beat the fourth set of ingredients well and keep aside.
4. Heat oil in a pan, sauté cumin and garlic, then add chilli powder and sauté briefly.
5. In a flat dish, arrange the fried brinjal slices, pour the curd mixture over them, and distribute the sautéed mixture evenly.
6. Gently mix with a fork before serving.
