Seafood Rice

Ingredients for Seafood Rice:

1. Parboiled rice – One cup

2. Squid – 4 or 5

3. Seer fish – 100 gm

4. Salt, turmeric powder and chilli powder – As required

5. Coconut oil – As required

6. Ginger – One piece, crushed

    Garlic – 12 cloves, crushed

    Green chillies – 4, crushed

7. Onions – 2 big, chopped fine

    Curry leaves – 2 stem

8. Coriander leaves chopped – One cup

9. Tomato – 2, chopped fine

10. Kashmiri Chilli powder – 1 big spoon

     Chilli powder – 2 small spoons

    Coriander powder – 1 small spoon

    Turmeric powder – 1/4 small spoon

    Garam masala powder – 1/4 small spoon

11. Prawns cleaned – Half cup

12. Coconut milk – Half cup

13. Salt – For taste

14. Pepper powder – 1 small spoon

     Garam masala powder – 1/2 small spoon

How to prepare Seafood Rice?

1. Cook rice until it is 3/4th done.

2. Marinate squid and fish separately using ingredients number 4.

3. Fry them separately and keep aside.

4. Heat oil and saute ingredients number 6.

5. When they turn tender add onions and curry leaves, and saute well.

6. Add half quantity of coriander leaves and mix well.

7. Add tomato and keep stirring the ingredients until it is well sauted.

8. Add the curry powders and continue sauting until a thin layer of oil appears on its surface.

9. Add prawns, along with fried fish and squid.

10. Add half cup water too and cook the contents.

11. When the mixture starts to boil, add coconut milk.

12. Allow the contents to boil.

13. Add cooked rice, half of remaining coriander leaves and salt.

14. Mix all the ingredients together and close the lid.

15. Cook until the rice turns dry and water content is fully absorbed.

16. Sprinkle pepper powder, garam masala powder and remaining coriander leaves. Serve hot.
