Vattalappam (Recipe 1)
Ingredients for Vattalappam:
1. Eggs -5
2. Cloves – 3
Cardamom – 8
Cinnamon – ¾ inch piece
3. Jaggery – ¼ kg
4. Coconut milk – ½ cup
5. Vanilla essence – 1.5 small spoons
How to prepare Vattalappam?
1. Powder ingredients no: 2.
2. Add ¾ cups of water to the jaggery and melt it by boiling. Allow it to cool.
3. Beat the eggs well and add ingredients no: 2 to it.
4. Filter jaggery juice and add to the above mixture. Mix the contents well.
5. Add coconut milk little by little and beat again.
6. Filter the contents into another vessel, add essence and place in a steam cooker.
7. Cook in steam for the next 1 hour.
8. You can also cook it in a pressure cooker.

Vattalappam (Recipe 2)

Ingredients for Vattalappam (Recipe 2):
1. Sugar – 1.5 cups
2. Eggs – 10
Jaggery – 200 gm
3. Coconut milk – 1 litre
4. Cardamom – 10
How to prepare Vattalappam (Recipe 2)?
1. Preheat the oven to 150 degrees Celsius.
2. Heat sugar in a pan till it turns brown.
3. Add water and melt it completely.
4. When it starts thickening, pour it into a baking tray and its edges.
5. Beat eggs and jaggery together till the jaggery melts completely.
6. Add coconut milk to it and strain the contents.
7. Add cardamom powder and mix well.
8. Pour this mixture into the tray where the caramelised sugar is taken.
9. Immerse this tray in hot water and bake in a preheated oven for half an hour.
