Ingredients for Bhatkal Biryani:
- Either chicken or mutton pieces – 1 kg(You can use minced mutton with bone as well)
- Kaima rice (Jeerakasala) – 1 kg
- Onion sliced – 1kg
- Green chillies with stalk removed – 25-30
- Ginger-garlic paste – 4 spoons
- Tomato chopped – 300 gm
- Coriander leaves and mint leaves – as needed
- Garam masala powder – 1 tsp
- Lemon juice – from 1 or 2 lemons
- Salt – as needed
- Cinnamon – 3-inch piece
- Cloves – 4
- Cardamom – 4
Method of preparation of Bhatkal Biryani:
- Preheat the oven to 300 degrees Fahrenheit
- Heat oil and saute onion.
- Then add green chillies, ginger-garlic paste, tomato, coriander leaves, putina leaves and garam masala.
- Add chicken pieces along with lemon juice.
- Sauté well, close the lid and cook well. It should not be dry. It should have some gravy.
- Heat the ghee and fry the rice.
- Add double the quantity of water, salt, cinnamon, cloves and cardamom.
- Half-cook the rice and drain the water to prepare the rice for biryani.
- Take a vessel. Add a little rice. Spread a little coriander and mint leaves, and spread a little chicken/mutton on top.
- Again, spread rice and continue the same process to get a few layers of rice-chicken/mutton.
- Tightly seal the vessel and bake the biryani at 300 degrees Fahrenheit for 45 minutes.
