Uppu Maanga Curry (Salted Mango Curry)

Ingredients for Uppu Maanga Curry (Salted Mango Curry):

1. Salted Mango – 4 

    Green Chilli (slit) – 3  

    Turmeric Powder – ¼ tsp 

    Water – As required 

2. Grated Coconut – 1 cup 

    Garlic – 3 cloves 

    Cumin Seeds – ½ tsp 

3. Coconut Oil – 1 tbsp 

    Mustard Seeds – ½ tsp 

    Dried Red Chilli – 2 

    Shallots (sliced) – 4 

How to prepare Uppu Maanga Curry (Salted Mango Curry)?

1. Cut four salted mangoes into small pieces after peeling the skin. Cook with green chilli, turmeric powder, and enough water. 

2. Grind the second set of ingredients into a smooth paste and add to the cooked mango. 

3. When it starts to boil, remove from heat. 

4. Heat 1 tbsp coconut oil in a pan, add the third set of ingredients, sauté well, and add to the curry. 

5. Serve hot.
