Tomato - Nuts Theeyal

Ingredients for Tomato – Nuts Theeyal:

1. Coconut oil – 2 big spoons

2. Red onion – 15, chopped

     Garlic – 4 cloves, chopped

     Ginger – One small piece, chopped

     Green chilli – Four, chopped

     Salt – As needed

3. Almonds – Six

4. Tomato (ripe) – Three, sliced

5. Grated coconut – Quarter cup

6. Chilli powder – One small spoon

    Coriander powder – One small spoon

    Turmeric powder – A pinch

     Cumin – A pinch

     Curry leaves – As needed

6. Tamarind extract – One small spoon

7. Coconut oil – Two small spoons

8. Mustard seeds – Half small spoon

9. Cashew nuts – Ten, fried

How to prepare Tomato – Nuts Theeyal?

1. Heat coconut oil and saute ingredients no: 2.

2. Add almonds, saute it for a while and add tomatoes. Mix well and saute the ingredients.

3. Fry grated coconut until it turns golden brown.

4. Add the powders, reduce the flame and fry for a few minutes. Put off the flame.

5. When it completely cools off, grind it to a smooth paste.

6. Add this coconut paste into a pan and saute for a while.

7. When it boils, add tamarind juice and mix well.

8. When oil separates from theeyal, put off the flame.

9. Heat oil and temper mustard seeds, followed by cashews.

10. When cashews are fried well, add to the Nuts Theeyal and mix well.
