Sweet Spicy Vazhuthanga

Ingredients for Sweet Spicy Vazhuthanga:

1. Violet brinjal – ½ kg

2. Salt – For taste

3. Oil – As required

4. Green chillies – 4

    Garlic – 8

    Ginger – ½ inch piece

    Cumin seeds – 1 small spoon

    Shallots – 1 cup

5. Red chilli powder – 1 small spoon

    Turmeric powder – ½ small spoon

6. Jaggery – 75 gm

7. Tamarind juice – 30 gm

    Salt – For salt

8. Onions cut into round pieces and fried – 3, medium sized

9. Onions fried and cilantro chopped – To decorate

How to prepare Sweet Spicy Vazhuthanga?

1. Prepare jaggery solution by melting jaggery in boiling water, and filter it.

2. Split brinjals lengthwise into 3 or 4 parts. But its stalk should not be broken.

3. Marinate with salt and bind each brinjal using a thread.

4. Fry brinjals in hot oil and keep aside.

5. Make a fine paste of ingredients no: 4 and sauté in remaining oil.

6. Add turmeric and chilly powder and sauté again.

7. When colour changes, add 1-1.5 cups of water, tamarind juice, salt and jaggery solution.

8. Mix the contents well.

9. Remove the threads from brinjal and put in gravy one by one.

10. Slowly mix the brinjals in curry. Take extra so that brinjal pieces don’t break from stalks.

11. When it’s well cooked, add fried onions and take off from flame.

12. Decorate using coriander leaves and fried onions.
