Pidi contains some form of syrup along with balls (called pidis). They can be prepared as both sweet and salty flavours. Sharkkara Pidi is a sweet dish, more like pudding. Jaggery is added to this pidi with rice balls, to add sweetness to the dish.

Sharkkara Pidi Recipe

Ingredients for Sharkkara Pidi:

1. Coconut grated – 3 cups

2. Water – 1 cup

3. Salt – A pinch

    Oil – 1 large tablespoon

4. Rice flour without grains – 1 cup

5. Milk – A little

     Cardamom powder – 1/2 teaspoon

6. Jaggery – 100 gms

7. Rice flour – 2 large tablespoons

     Cardamom powder – 1/2 teaspoon

How to prepare Sharkkara Pidi?

1. Extract coconut milk. Keep 1 cup of first extract and 2 cups of second extract separately.

2. Boil water. Add salt and oil, then slowly add rice flour and stir continuously.

3. After lowering the flame, stir continuously and mix continuously without forming lumps.

4. Once taken off the heat, knead well.

 5. Into this, add cardamom powder and milk, then knead and combine.

6. When it becomes smooth, roll into small balls.

7. Melt the jaggery and prepare the syrup.

8. Boil the second coconut milk.

9. When it starts boiling, add the balls one by one and cook. If added together, the balls may break apart.

10. When the balls are cooked well and the coconut milk reduces to half, add the jaggery syrup and swirl the pan to mix. If you stir with a ladle, spatula or spoon, the balls may break.

11. Mix the rice flour with the first coconut milk, then add cardamom powder and combine without forming lumps.

12. Add this mixture to the jaggery mixture in the stove and stir.

13. When it starts boiling, remove from heat.

14. Serve when warm (before it completely cools down).
