Sago Pudding with Coconut
Ingredients for Sago Pudding with Coconut:
1. Sago – 1 cup
2. Milk – 600 milli
Coconut milk – 400 milli
Salt – A pinch
Sugar – ½ cup
3. Butter – 4 big spoons
4. Yellow yolk – 2
5. Vanilla bean – 1, inner portion scrapped
Milk – 1 big spoon
6. Coconut scrapped and roasted – ½ cup
Strawberries sliced – ½ cup
7. Small meringue – 4-6, to decorate (optional)
How to prepare Sago Pudding with Coconut?
1. Soak sago in water for 1 hour.
2. Mix ingredients no: 2 in a pan and slightly warm it by placing in stove. Use low flame only.
3. Strain sago from water and add to it.
4. Cook sago in low flame for around 30 minutes till it’s done. Stir occasionally to avoid clotting.
5. When it cools a little bit, add butter and mix well.
6. Take yellow yolk in a bowl and beat well.
7. Add ingredients no: 5 and beat again. You can also add vanilla essence.
8. Add sago little by little and mix well. Sago should be lukewarm.
9. Transfer all the contents back to the pan and close it.
10. Allow it to rest for 15 minutes.
11. Transfer your sago pudding to serving bowls.
12. Decorate them with roasted coconut and sliced strawberries.
13. You can place meringue on its top if you want.
14. Serve your Sago Pudding with melted jaggery.
