Raitha Rice

 

Ingredients for Raitha Rice:

1. Boneless chicken – 2 cups

    Powders of Turmeric, chilly, garam masala, salt and pepper – As required

2. Basmati rice – 2 cups

3. Oil – For sauting

    Cinnamon – 3 pieces

    Cloves – 6

    Cardamom – 4

    Cumin seeds – A small spoon

    Curry leaves – 2 stalks

4. Onions – 3, finely chopped

5. Ginger chopped – 1 small spoon

    Garlic chopped – 1 small spoon

6. Tomato finely chopped – 2

    Green chillies – 3 finely chopped

    Capsicum cut into pieces – 1

7. Pepper powder – 1 small spoon

    Turmeric powder – 1 small spoon

    Garam masala powder – 1 small spoon

    Chilli sauce – 1 small spoon

    Soya sauce – 1 small spoon

    Tomato sauce – 1 small spoon

8. Lemon juice – From 1 lemon

    Coriander leaves, Mint leaves and Curry leaves – A little each

Method of preparation of Raitha Rice:

1. Cook chicken adding the powders in sufficient quantities.

2. Cook basmati rice and keep aside.

3. Heat oil in a pan and sauté ingredients no: 3.

4. When the pungent smell of masala changes to a sweet aroma add chopped onions and sauté till it turns brown.

5. Add chopped onions and sauté till it turns golden brown.

6. Add ginger and garlic and sauté for a while and add ingredients no: 6.

7. Sauté for a while and add cooked chicken pieces along with ingredients no: 7.

8. Mix the contents well, spread rice on the top, pour lemon juice and garnish with coriander, curry and mint leaves.

9. Now dum your biryani for 10 minutes and serve hot.

    Usually I don’t see your writing on food.i saw as I used to have raithas.i think there is a mistake with name.food may be right.raitas are curds with fruit and vegetables.rice raithas means boiled rice included too.

      Actually I also got confused with the name. Though Curd is an ingredient of this dish, it’s not a raita dish. This recipe is from Vanitha, and that’s why I didn’t change the name
