Rainbow Chicken is a healthy and colourful recipe, equally loved by adults and kids. It can also be consumed by those who take a protein-based diet.

Ingredients for Rainbow Chicken:
- Chicken – 400 gm, boneless
- Salt – As needed
Pepper powder – 1 small powder
Chilli powder – 1 small powder
Corn flour – 1 big spoon - Carrot – 1, small, cut into small pieces
Broccoli florets – ½ cup - Green, red, and yellow capsicum – ½ cup, cut into square pieces
- Vegetable oil – 3 big spoons
- Garlic chopped fine – 1 small spoon
Tomato and onion – 1 each, cut into small pieces
How to prepare Rainbow Chicken?
- Put broccoli and carrots in warm water and cook for 2 minutes. Keep it aside.
- Take chicken in a bowl and mix with the powders listed as No: 2.
- Heat half the oil and fry the chicken.
- In the remaining oil, sauté garlic and onion.
- Add tomato, capsicum, and half-cooked broccoli and carrot.
- Sauté the vegetables. When they’re done, add the chicken and salt.
Chicken Curry Variation
If you want gravy, take a bowl and mix 1 big spoon of corn flour, 4 big spoons of soya sauce, and 1 small spoon of sugar. Add this mixture to the chicken and cook until the gravy thickens.
