Rainbow Chicken is a healthy and colourful recipe, equally loved by adults and kids. It can also be consumed by those who take a protein-based diet.

Rainbow Chicken

Ingredients for Rainbow Chicken:

  1. Chicken – 400 gm, boneless
  2. Salt – As needed
    Pepper powder – 1 small powder
    Chilli powder – 1 small powder
    Corn flour – 1 big spoon
  3. Carrot – 1, small, cut into small pieces
    Broccoli florets – ½ cup
  4. Green, red, and yellow capsicum – ½ cup, cut into square pieces
  5. Vegetable oil – 3 big spoons
  6. Garlic chopped fine – 1 small spoon
    Tomato and onion – 1 each, cut into small pieces

How to prepare Rainbow Chicken?

  1. Put broccoli and carrots in warm water and cook for 2 minutes. Keep it aside.
  2. Take chicken in a bowl and mix with the powders listed as No: 2.
  3. Heat half the oil and fry the chicken.
  4. In the remaining oil, sauté garlic and onion.
  5. Add tomato, capsicum, and half-cooked broccoli and carrot.
  6. Sauté the vegetables. When they’re done, add the chicken and salt.

Chicken Curry Variation 

If you want gravy, take a bowl and mix 1 big spoon of corn flour, 4 big spoons of soya sauce, and 1 small spoon of sugar. Add this mixture to the chicken and cook until the gravy thickens.
