Paneer Mango Curry
Ingredients for Paneer Mango Curry:
1. Paneer – 250 gm
2. Green mango – 1
3. Salt, turmeric powder – As needed
4. Coconut – 1
5. Chilli powder – 1 big spoon
Coriander powder – 1/2 big spoon
Turmeric powder – ½ small spoon
6. Oil – 2 big spoons
7. Onion – 1, sliced thin
Ginger – 1 piece, sliced thin
Green chillies – 4, cut lengthwise
Salt – For taste
8. Coconut oil – 2 big spoons
9. Mustard – 1 small spoon
Red chillies – 2, cut into pieces
Curry leaves – 1 stem
10. Chilli powder – ¼ small spoon
Turmeric powder – A pinch
How to prepare Paneer Mango Curry?
1. Cut paneer into small square pieces.
2. Remove skin of mango and slice in slanting style.
3. Marinate mango slices with salt and turmeric.
4. Extract 1 cup first milk and 2 cups of second milk from scrapped coconut.
5. Make a fine paste of ingredients no: 5.
6. Heat oil and sauté ingredients no: 7.
7. When onions turn brown, add the gravy and continue sauting till raw smell goes away.
8. Add second coconut milk and allow to boil.
9. Wash mango pieces in cold water and add to coconut milk.
10. Cook mango in this milk. But never overcook it.
11. Add first milk, along with paneer cubes and put off the flame just before curry boils.
12. Heat oil and temper ingredients no: 9.
13. Put off the flame and add ingredients no: 10.
14. Pour it to curry and mix well.
