Here is an easy vegetarian curry for you, Bitter gourd–Tomato–Mango Curry, which includes the bitterness of bittergourd and the sourness of green mangoes and tomatoes. This Paavakka–Thakkali–Pazha Maanga Curry, with a tangy, mildly bitter mix of different vegetables, is a perfect Kerala dish. You can serve this tasty curry for lunch, along with a plate of rice.

Bittergourd Tomato Mango Curry

Ingredients for Bittergourd Tomato Mango Curry:

  1. Bitter gourd – 2, cut into pieces
    Onion – 1 big, finely chopped
    Turmeric powder – ¼ small spoon
    Salt – For taste
  2. Coconut oil – 1 big spoon
  3. Cumin seeds – ½ small spoon
    Mustard – ½ small spoo
    Curry leaves – 1 stalk
  4. Ginger chopped – ½ small spoon
    Garlic – 4 big cloves
  5. Tomato – 2 medium, cut into fine pieces
    Well-ripened mango fruit – 1, cut into pieces
    Chilli powder – 1/2 tsp (or as per paste)
    Garam masala powder – ½ small spoon
    Salt – As required
    Coriander powder – ½ small spoon
  6. Lemon juice – 1 big spoon

How to prepare Bittergourd Tomato Mango Curry?

  1. Use an earthen pot to cook the ingredients listed under 1. Cook well.
  2. Heat oil in a pan (Cheena Chatti) and sauté the ingredients listed under 3.
  3. Add ginger and garlic to the sautéed ingredients and sauté again.
  4. Add cooked bitter gourd to it, along with ingredients listed under 5, mix well, and cook again with the lid closed.
  5. Check the salt and turn the flame off.
  6.  Add lemon juice to your Pavakka curry just before you serve.
