Ottada is a traditional sweet dish of Kerala. The preparation method of Ottada is slightly different from traditional steamed ada. In this case, earthen pots are used to cook the adas wrapped in banana leaves, and the taste is definitely different from normal Kerala adas. ‘Od’ means ‘earthen’ containers, vessels, pots, etc., and hence the name.

Ingredients for Ottada:

  1. Coconut grated – 150 gm
    Sugar – 4 big spoons
    Cardamom powder – 1 small spoon
    Ghee – 2 small spoons
  2. Water – 250 milli
    Salt – A pinch
  3. Fried rice flour – 250 gm
  4. Torn banana leaves – As required

How to prepare Ottada?

  1. Mix together ingredients no: 1 to prepare the filling.
  2. Boil water with salt and add the rice flour.
  3. Stir it well and turn off the flame.
  4. Before the flour cools off completely, mix it well and prepare a soft dough.
  5. Place a little dough on a banana leaf and gently press using your finger to spread it.
  6. Place some coconut-sugar filling on its top and fold it.
  7. Heat an earthen pot in the stove and put 1 or 2 adas inside it.
  8. Flip both sides till adas are well-cooked.
