Netholi – Vegetables Mezhukkupuratti
Ingredients for Netholi – Vegetables Mezhukkupuratti:
1. Netholi (Anchovy) – ½ kg
2. Turmeric powder, Chilli powder – A little
3. Salt – For taste
4. Carrot – 1
Beans – 10
Potato – 1
Okra- 3
Egg plant – 1
Bitter gourd – 1
5. Coconut oil – As required
6. Mustard – ½ small spoon
Cumin seeds – ¼ small spoon
7. Onions – 1, chopped
Green chillies – 4, chopped
8. Chilli powder – 1 small spoon
Coriander powder – 1/2 small spoon
Turmeric powder – 1/4 small spoon
Garam masala powder – 1/2 small spoon
Salt – As needed
9. Tomato – 2, chopped fine
How to prepare Netholi – Vegetables Mezhukkupuratti?
1. Clean fish, and marinate using salt, turmeric powder and chilli powder.
2. Cut ingredients no: 4 into small pieces, and keep them separately.
3. Fry each of them in coconut oil separately. Never over fry the vegetables.
4. In the remaining oil, fry fish. Keep aside.
5. Heat oil in the pan, and sputter mustard and cumin.
6. Add onions and green chillies and sauté well.
7. Add ingredients no: 8, followed by tomatoes and sauté the contents again.
8. When it’s done, add fried vegetables to it.
9. Add fried netholi and gently toss the contents.
