Vegetable Biryani – Recipe 2

Ingredients for Vegetable Biryani:

1. Biryani rice – 3.5 cups

2. Ghee – ½ cup

3. Cinnamon – 1 piece

    Cloves – 6

    Cardamom – 6

4. Salt – As required

5. Hot water – 7 cups

For vegetable masala:

6. Oil – ½ cup

7. Ginger-garlic paste – 2 big spoons

8. Onions – 2, finely chopped

    Green chillies – 6, split into two

    Tomatoes – 2 medium sized, chopped

9. Carrot, beans and potatoes chopped fine and green peas – 100 gm each

    Salt – For taste

10. Coconut scrapped – 1 cup, finely grinded

11. Garam masala powder – 1 big spoon

12. Coriander leaves – 50 gm, chopped

      Mint leaves – 50 gm, chopped

13. Bread – 4 slices, cut into small square pieces and fried

To set biryani:

14. Ghee – A little

15. Garam masala powder – 1 small spoon

     Onions – 2 small, sliced and fried till golden brown

How to prepare Vegetable Biryani?

1. Wash rice and drain off excess water.

2. Heat ghee and splutter ingredients no: 3.

3. Add rice and fry for 5 minutes.

4. Add salt and hot water and allow to boil.

5. Close the lid and cook in low flame.

6. When rice is well cooked, water content should be fully absorbed.

7. Heat oil and sauté ginger-garlic paste.

8. Add ingredients no: 8 and sauté the contents.

9. When onions are well sauted, add vegetables, salt and half cup water. Cook the contents.

10. When it’s done, add coconut paste and allow to boil.

11. Add garam masala powder, mint leaves and coriander leaves.

12. Mix well and put the flame off. The gravy should not be too thick.

13. Add fried bread crumbs and mix well.

14. Take a thick bottomed vessel to set biryani and apply a thin coat of ghee.

15. Spread half amount of vegetable masala in the vessel as one layer.

16. Spread half amount of cooked rice as layer two.

17. Spread half the quantity of ingredients no: 15.

18. Then layer the remaining vegetable masala and rice as next two layers respectively.

19. Spread garam masala and remaining fried onions on the top.

20. Close the lid and cook for 5 more minutes.
