Mutton Raan

Ingredients for Mutton Raan:

1. Mutton Thigh Piece – 1 kg

2. Kashmiri Chilli Powder – 3 tsp

   Pepper – 2 tsp

   Ginger – 3-inch piece

   Garlic – 12 cloves

   Cloves – 7

   Cinnamon – 3-inch piece

   Cumin – 4 tsp

3. Lemon Juice – From 1.5 lemons

   Curd – 1/2 cup

   Salt – As required

4. Ghee – 1 cup

How to prepare Mutton Raan?

1. Clean the mutton thoroughly, remove excess fat, and pierce it all over with a fork. Allow the water to drain.

2. Grind the second set of ingredients into a fine paste and mix it with the third set of ingredients.

3. Apply this mixture generously over the mutton and refrigerate it for a full day.

4. Wrap the marinated mutton in aluminium foil and bake it in a preheated oven at 150°C for 2 hours.

5. Occasionally open the foil and pour some ghee (one cup in total) in small portions. Finally, uncover it and bake until the top turns light brown.

6. While baking, collect the dripping gravy, pour it into a pan, bring it to a boil, and reduce it.

7. Brush this reduced gravy over the Mutton Raan. Serve hot with onion salad.
