Mushroom Egg Salad

Ingredients for Mushroom Egg Salad:

1. Button mushroom – 200 g

    Salt – A little

    Virgin coconut oil – As needed

2. Eggs – 2, boiled and cut into pieces

3. Tomato – 100 g, chopped

4. Capsicum – 50 g, chopped

5. Salad cucumber – 100 g, chopped

6. Groundnuts – 30 g, roasted

7. Onion – 50 g, chopped

8. Apple cider vinegar / Lemon juice – As needed

9. Virgin coconut oil – 1 tbsp

10. Salt, pepper powder – To taste

How to prepare Mushroom Egg Salad?

1. Saute mushroom lightly adding sufficient salt and a little virgin coconut oil and keep aside.

2. Mix the sautéed mushrooms with ingredients listed 2 to 7.

3. Prepare the dressing for Mushroom Egg Salad by tossing ingredients 8 to 10.

4. Add the dressing to the salad, mix well, and serve.
