mampazha curries Mampazha Kaalan Mango Kaalan recipes

Ingredients for Mango Kaalan (Mampazha Kaalan):

  1. Well-ripened mango fruit – 5 to 8
  2. Turmeric powder – ½ small spoon
    Salt – For taste
    Pepper powder – 2 small spoons
  3. Coconut – 1, scrape
    Cumin seeds – 1 small spoon
  4. Jaggery – 2 pieces
    Curd – 2 cups
  5. Coconut oil – 1 small spoon
  6. Mustard – ½ small spoon
    Fenugreek – ¼ small spoon
  7. Red chillies – 2
    Curry leaves – 2 stems

How to prepare Mango Kaalan (Mampazha Kaalan)?

  1. Use some well-ripened mangoes (countryside/nadan).
  2. Peel off the skin and cook it well, by adding ingredients no: 2 and water.
  3. Make a fine paste of cumin seeds and coconut, and add it to the cooked mangoes.
  4. Add jaggery and curd, mix well and take off from the flame.
  5. Heat oil and sputter mustard and fenugreek seeds.
  6. Fry red chillies and curry leaves, and add to the curry well.
  7. Mix the curry well and serve.
