
Ingredients for Mango Kaalan (Mampazha Kaalan):
- Well-ripened mango fruit – 5 to 8
- Turmeric powder – ½ small spoon
Salt – For taste
Pepper powder – 2 small spoons - Coconut – 1, scrape
Cumin seeds – 1 small spoon - Jaggery – 2 pieces
Curd – 2 cups - Coconut oil – 1 small spoon
- Mustard – ½ small spoon
Fenugreek – ¼ small spoon - Red chillies – 2
Curry leaves – 2 stems
How to prepare Mango Kaalan (Mampazha Kaalan)?
- Use some well-ripened mangoes (countryside/nadan).
- Peel off the skin and cook it well, by adding ingredients no: 2 and water.
- Make a fine paste of cumin seeds and coconut, and add it to the cooked mangoes.
- Add jaggery and curd, mix well and take off from the flame.
- Heat oil and sputter mustard and fenugreek seeds.
- Fry red chillies and curry leaves, and add to the curry well.
- Mix the curry well and serve.
