Kirdha

Ingredients for Kirdha:

1. All-purpose flour – 2½ cups 

    Salt, Water – As required 

2. Egg – 5 

3. Bengal gram – 100g 

4. Ghee – 1½ tbsp 

5. Grated coconut – 1½ coconuts 

    Sugar – 1 cup 

    Cardamom powder – ½ tsp 

6. Oil – As required 

How to prepare Kirdha?

1. Prepare dough by mixing all-purpose flour, a pinch of salt, and enough water to achieve a poori-like consistency. 

2. Boil the eggs and cut each into four pieces. 

3. Cook the Bengal gram, drain the water, and set it aside. 

4. Heat ghee in a pan, add the cooked Bengal gram along with the fifth set of ingredients, sauté well, and set aside. This is the filling. 

5. Divide the prepared dough into small balls and roll them out to the size of a poori.

6. Place some filling and one piece of egg in the center, cover it with another rolled-out dough sheet, and seal the edges like Irachi Pathiri. 

7. Deep-fry in hot oil until golden brown and crisp.
