Kerala Fish Biryani Recipe

Ingredients for Kerala Fish Biryani:

1. Fish – 1 kg, cut into thin flat pieces

2. Onions – 250 gm

3. Vegetable oil – 200 gm

    Ghee – 50 gm

4. Cashews – 4 small spoons

    Raisins – 4 small spoons

5. Onions – ½ kg

    Garlic – 2 cloves, crushed

    Red chillies – 10, crushed

    Curd – 2 big spoons

    Ginger – 1 piece crushed

    Tomato – 3 big, sliced

    Coriander leaves – 10 gm

    Mint leaves – 2 stems

6. Biryani masala – 2 small spoons

    Fennel powder – 1 small spoon

    Coriander powder – 2 small spoons

    Turmeric powder – 1 small spoon

7. Chilli powder – 2 small spoons

    Turmeric powder – ½ small spoon

    Salt – As required

8. Coconut oil – ¼ cup

9. Biryani rice – 1 kg

10. Cardomom – 10

      Cloves – 6

      Cinnamon – 1 piece

      Salt – As required

11. Coriander leaves – For garnishing

How to prepare Kerala Fish Biryani?

1. Clean the fish and keep it aside.

2. Mix oil and ghee and heat in a pan.

3. Add sliced onions to it, and fry till golden brown.

4. Drain onions from oil and keep aside.

5. In the remaining oil, fry cashews and raisins and drain from the oil.

6. In the remaining oil, add ingredients no: 5 and sauté well.

7. Once it’s done, add the powders listed as 6.

8. Mix well and turn the flame off. This is used as masala for fish biryani.

9. Marinate the fish, adding ingredients no: 7, and allow it to rest for some time.

10. Fry the fish in hot oil and drain excess oil.

11. In a biryani vessel, make a layer with half of the masala.

12. Place fried fish as the second layer and the remaining gravy as the third layer.

13. Take the correct measurement of rice.

14. For one cup of rice, take 1.5 cups of water.

15. Take an exact measurement of water and boil it in a vessel.

16. Add ingredients no: 10 to it, and then washed rice.

17. Mix well the ingredients and cook the rice. Water content should be fully absorbed.

18. After 10 minutes, spread half of the cooked rice on the top of the layered fish gravy.

19. Spread fried raisins, cashews and onions on its top.

20. Then spread the second layer of rice and a little coriander leaves on top.

21. Pour the oil left after frying fish on top of the biryani.

22. Close the vessel tightly and cook in a low flame for 20 minutes.

23. Open the lid after 30 minutes.

24. Transfer the cooked rice to another plate.

25. You can serve fish biryani by placing fish pieces and gravy on top.
