
Ingredients for Kozhikode Kaalan:
- Elephant yam, cut into small pieces after removing skin – 1 cup
Raw banana split into two and chopped (after removing skin) – 1 cup
Pepper powder – 3 small spoons
Turmeric powder – 3 small spoons
Salt – As required - Curd – 2 cups
- Coconut scraped – 1.5 cups
Green chillies – 4
Cumin seeds – 2 small spoons - Fenugreek fried and powdered – 2 small spoons
- Ghee – 1 big spoon
Mustard – 1 big spoon
Red chillies – 4 cut into pieces
Curry leaves – A handful
How to prepare Kozhikode Kaalan?
- Mix ingredients no: 1 together, add sufficient water, and cook well.
- Add curd to cooked vegetables and boil well.
- Make a fine paste of ingredients no: 3 and add to the curry.
- When it’s done, take the curry from the flame, add fenugreek powder, and mix well.
- Heat ghee in a pan, temper ingredients no: 6 and add to the curry.
- Mix well and serve.
