Fruit Payasam recipe

Ingredients for Fruit Payasam:

1. Ghee – 200 gm

2. Cashews – 100 gm

    Dry raisins – 100 gm

3. Matti pazham or Kadali pazham (Small type banana) – 15, cut into small pieces

4. Pineapple – 1 small, chopped fine

5. Dates – ½ kg, chopped fine

6. Jaggery – ¾ kg melted

7. Coconut milk second extract – 5 cups

8. Coconut milk first extract – 2 cups

9. Cardamom powder – 2 small spoons

    Sugar candy – ¼ cup

How to prepare Fruit Payasam?

1. Heat 3 big spoons of ghee in a urli and fry cashews and raisins.

2. When they are fried, add banana pieces and sauté for 5 minutes.

3. Add pineapple pieces and sauté for 2 minutes, followed by dates for 2 more minutes.

4. Add melted jaggery and fry the contents for 2 minutes. Add ghee at regular intervals.

5. When the fruits are fried well and payasam starts to separate from the edges of the urli, add the second extract of coconut milk.

6. Cook payasam till it thickens, and then add thick coconut milk.

7. When the payasam starts to boil, turn off the flame.

8. Sprinkle cardamom powder and sugar candy, and mix the payasam.

Note: Use only approximately ½ cup of water to melt jaggery. Otherwise, it takes more time to fry the contents.
