Éclair
Ingredients for Éclair:
1. Butter – 4 big spoons
Water – ¼ cup
Milk – ¼ cup
Maida – ½ cup
Egg – 2, beaten
For filling:
4. Corn flour – 2 big spoons
5. Milk – 1/2 cup
Condensed milk – ½ cup
Sugar – 1 big spoon
6. Vanilla essence – 2 small spoons
For glaze icing:
7. Icing sugar – 125 gm
Coco powder – 2 big spoons
8. Lukewarm water – 2 big spoons
How to prepare Éclair?
1. Preheat oven in 150 degree celsious.
2. Mix ingredients no: 1 in a pan and boil it well.
3. When butter melts completely add maida and mix the contents well.
4. Cook till maida is done and keep stirring till the mixture leaves the edges of the pan.
5. When it turns a ball at the centre, take off from flame and allow to cool.
6. Before the mixture completely cools, add beaten eggs and mix again.
7. This batter is used for piping. So check its thickness.
8. You can do piping on a baking sheet in desirable shapes.
9. Place the baking sheet in the pre-heated oven and bake for 15 minutes.
10. Reduce the heat and bake for 1.5 hours till they turn light brown colour.
11. Take them from oven and allow to cool.
12. Gently cut one side and pipe the filling inside it.
13. To prepare filling, mix some corn flour with a little milk and keep aside.
14. Mix together ingredients no: 5 and place in low flame.
15. When it boils add corn flour powder and stir continuously.
16. Take off from flame and add vanilla essence.
17. Mix it well and allow to cool.
18. Refrigerate the filling. The content should be thick.
19. To prepare icing, first blend and mix ingredients no: 7.
20. Add lukewarm water to it and transfer the contents to flat container.
21. Knead the dough till the contents stick to the rear side of the spoon. This mixture is used for icing.
22. After fillings are filled inside the éclairs, pour icing on its top and allow to set.
23. Approximately 1- éclairs can be prepared using this quantity of ingredients.
