Coriander Leaf – Lime Rice

Ingredients for Coriander Leaf – Lime Rice:

1. Oil – As required

2. Garlic – 3 cloves, chopped fine

    Onion – 1 big, chopped fine

3. Basmati rice – 3 cups

    Salt – For taste

4. Chicken/Veg stock – 4 cups (can use soup cubes too)

5. Lemon juice – From 3 lemons

6. Coriander leaves chopped & garlic fried – To decorate

How to prepare Coriander Leaf – Lime Rice?

1. Heat oil in a big pan.

2. In medium heat, sauté garlic and onion for 3-4 minutes.

3. Reduce flame and add washed rice along with salt.

4. Keep stirring. Rice should never turn brown.

5. Add 3 cups of stock and juice from 2 lemons. Mix the contents well.

6. Close the lid and cook rice in low flame.

7. If needed, add excess stock and lemon juice.

8. Just before you serve, decorate with coriander leaves and roasted garlic.
