Chettinad Egg Masala
Ingredients for Chettinad Egg Masala:
1. Eggs – 5
2. Tomato – 2
Garlic – 3 cloves
Ginger – ½ piece
3. Turmeric powder – ¼ tsp
4. Curry leaves – 2 stalks
5. Coriander leaves chopped – 1 table spoon
6. Lemon juice – 1 tsp
7. Oil – 3 table spoons
Mustard seeds – ½ tsp
Fennel seeds – ¼-1/2 tsp
Onions – 2
Green chillies – 3
For masala:
8. Cloves – 3
Cinnamon – 1 piece
Red chillies – 4
Coriander seeds – 1 table spoons
Cumin seeds – ½ tsp
Fennel seeds – 1 tsp
Pepper seeds – 1.5 tsp
9. Couscous – 1 tsp
10. Coconut scrapped – 3 table spoons
How to prepare Chettinad Egg Masala?
1. Boil eggs and keep aside.
2. Make a fine paste of ginger, garlic and tomato using a mixer.
3. Heat a pan, and sauté ingredients no: 8.
4. When a pleasant aroma comes out, add couscous and sauté for 1 minute.
5. Add scrapped coconut and mix well.
6. Take off from flame and allow the contents to cool.
7. Make a fine paste.
8. Heat a pan and add oil.
9. Sputter mustard seeds and add fennel seeds.
10. Add curry leaves, chopped onions and chopped green chillies.
11. Sauté the contents and add salt.
12. Add tomato paste and sauté till raw smell goes out.
13. Add coconut paste and turmeric powder.
14. Reduce the flame and mix the contents well.
15. Add boiled eggs, a little water and cook in medium flame.
16. When curry boils well, take off from flame.
17. Garnish with coriander leaves and serve.
