
Ingredients for Carrot Raita:
- Coconut oil – 1 big spoon
- Mustard – ½ small spoon
- Shallots – 3, chopped
Green chillies – 1, chopped into round pieces - Carrot – 1, grated
Turmeric powder – ¼ small spoon - Curd – 1.5 cups
Salt – For taste - Curry leaves – 1 stem
How to prepare Carrot Raita?
- Heat oil in a pan and sputter mustard seeds.
- Add shallots and green chillies and fry till they turn golden brown.
- Add carrot and turmeric powder, and sauté till the water content is absorbed.
- Add salt to the curd and beat it once.
- When the carrot mixture cools completely, add it to the curd along with the curry leaves.
- Stir the curry before use.
