Carrot Raita recipe

Ingredients for Carrot Raita:

  1. Coconut oil – 1 big spoon
  2. Mustard – ½ small spoon
  3. Shallots – 3, chopped
    Green chillies – 1, chopped into round pieces
  4. Carrot – 1, grated
    Turmeric powder – ¼ small spoon
  5. Curd – 1.5 cups
    Salt – For taste
  6. Curry leaves – 1 stem

How to prepare Carrot Raita?

  1. Heat oil in a pan and sputter mustard seeds.
  2. Add shallots and green chillies and fry till they turn golden brown.
  3.  Add carrot and turmeric powder, and sauté till the water content is absorbed.
  4.  Add salt to the curd and beat it once.
  5. When the carrot mixture cools completely, add it to the curd along with the curry leaves.
  6. Stir the curry before use.
