Brinjal Chutney

Ingredients for Brinjal Chutney:

1. Purple Brinjal – 1 

2. Oil – 4 Small Spoons 

3. Mustard Seeds – 1 Small Spoon 

    Black Gram – 2 Small Spoons 

    Dried Red Chilli (Chopped) – 2 

    Black Pepper – 1/4 Small Spoon 

    Chilli Powder – 1/2 Small Spoon 

    Turmeric Powder – 1/2 Small Spoon 

    Curry Leaves – A Little 

4. Tamarind Extract – As Required 

    Salt – As Required 

5. Asafoetida (Roasted and Powdered) – 1/2 Small Spoon 

How to prepare Brinjal Chutney?

1. Take the whole brinjal and apply a little oil over it. 

2. Wrap the brinjal in a banana leaf and roast it over embers, or skewer it and hold it over a gas flame. Alternatively, wrap it in aluminium foil and bake it in the oven. 

3. Once roasted, finely chop the brinjal and set it aside. 

4. Heat oil in a pan and temper with the ingredients listed under the fourth set. Add the chopped brinjal and sauté well. 

5. Add tamarind extract and salt as required, cook until the oil separates, then mix in the roasted and powdered asafoetida. 

6. Remove from heat, let it cool, and store it in a jar.
