Beetroot Coconut Soup recipe

Ingredients for Beetroot Coconut Soup:

1. Olive oil – 2 big spoons

2. Shallots – 1, chopped

    Garlic – 3 cloves, chopped fine

    Ginger chopped fine – 1 big spoon

3. Beetroot – 3 big, cut into pieces

4. Vegetable stock – 5 cups

5. Thick coconut milk – 1 cup

    Salt – As required

    Pepper powder – ¼ small spoon

    Nutmeg powder – 1 big spoon

    Lemon juice and lemon skin scraped – From 1 lemon

6. Cream – 2 big spoons

How to prepare Beetroot Coconut Soup?

1. Heat oil in a big pan in medium flame.

2. Sauté ingredients no: 2 for 3 minutes.

3. Add beetroot and 4 cups of stock and allow the contents to boil.

4. Reduce the flame and cook beetroot for 8-10 minutes till it turns soft.

5. When it is done, allow it to cool completely.

6. Add 1 cup stock to beetroot mixture and blend well in a mixer.

7. Add ingredients no: 5 to it and heat the soup.

8. Decorate with cream and serve your beetroot coconut soup.
