Morning cooking feels so comforting when it’s simple, Isn’t it? Akki Roti is a dish that can be made with minimal effort and a very few ingredients. It goes well with any curry. Carrot, cucumber, and ash gourd are the vegetables usually added to prepare Akki Roti. Because of this, it tastes good even without a curry. Yet, the best combination is coriander chutney.

Ingredients for Akki Roti:
1. Roasted rice flour – One cup
2. Onion, finely chopped – 3/4 cup
3. Carrot, grated – One cup
4. Salt – To taste
5. Cumin – One small spoon
6. Coriander leaves – 2 tablespoons
Curry leaves – 2 tablespoons
7. Ghee – 2 tablespoons
8. Water – As needed
How to prepare Akki Roti?
1. Mix all ingredients in a bowl, add water, and make a dough soft enough to be flattened by hand. Never make batter by adding excess water.
2. Make small balls from the dough.
3. Place each ball on a piece of butter paper and flatten using your hand.
4. Grease a hot pan with oil or ghee, place the flattened roti along with the butter paper in reverse, and then peel off the paper
5. Cook both sides until they become light golden brown
6. Serve with coriander chutney
