Mutton Curry with Tender Coconut (Mutton Curry Karikkinoppam)

Ingredients for Mutton Curry with Tender Coconut (Mutton Curry Karikkinoppam):

1. Mutton with bone – 1 kg, cleaned

2. Ginger – 2-inch piece

    Garlic – 1 bulb

    Chilli powder – 2 tbsp

    Cumin seeds  – 1/2 tbsp

    Fenugreek – 1/2 tsp

    Turmeric powder – 1/4 tsp

    Mustard seeds – 1/2 tsp

3. Oil – 3/4 cup

    Onion – 4 large, sliced

4. Tomato – 3 large, peeled, deseeded, and finely chopped

5. Vinegar – 2 tsp

    Salt – To taste

    Lukewarm water – 1/4 cup

6. Sugar – A little

7. Tender coconut pieces – For garnish

How to prepare Mutton Curry with Tender Coconut (Mutton Curry Karikkinoppam)?

1. Clean the mutton and cut it into medium-sized pieces with the bone.

2. Mix the second set of ingredients and grind into a smooth paste.

3. Heat 3/4 cup oil in a pan, sauté the onions until golden brown, and set them aside.

4. In the same pan, add the ground paste and sauté well. Once the oil separates, add the chopped tomatoes and cook thoroughly.

5. When the masala is well-cooked, add the mutton pieces and stir-fry.

6. When the water reduces, add the fifth set of ingredients along with the sautéed onions. Stir well, cover the pan, and cook on low heat.

7. Transfer this mixture to a pressure cooker, stir, and cook for three whistles.

8. Once the mutton turns tender and the gravy thickens, add a little sugar and stir.

9. Mix everything well and garnish with tender coconut pieces before serving.
