Egg Yolk Curry

Ingredients for Egg Yolk Curry:

1. Oil – 3 teaspoons 

2. Mustard seeds – 1/4 teaspoon 

3. Shallots, chopped – 1 tablespoon 

4. Coriander powder – 1 teaspoon 

5. Curry powder – As required 

6. Water – 1 cup 

7. Salt – As required 

8. Eggs – 3 

9. Curry leaves – 1 sprig 

10. Thick coconut milk – 1 cup 

How to prepare Egg Yolk Curry?

1. Heat oil in a pan and splutter mustard seeds. 

2. Add shallots and sauté well. Once softened, add coriander powder and sauté until the raw smell disappears. 

3. Add curry powder and mix well. 

4. Pour water, stir, and let it boil. Add salt as required. 

5. Gently break eggs and pour them in different spots without stirring. 

6. Once the eggs are set, carefully flip them. 

7. Add curry leaves, mix gently, and allow the curry to thicken. 

8. Pour thick coconut milk, heat well, and remove from flame. 

9. Serve hot with rice, chapati, dosa, or boiled tapioca.
