Mathi Curry (Sardine Curry)

Ingredients for Mathi Curry:

1. Sardines – ½ kg 

2. Coconut oil – 4 tablespoons 

3. Shallots – 10 

    Garlic – 5 cloves 

4. Chilli powder – 2 tablespoons 

    Coriander powder – 1 tablespoon 

    Turmeric powder – ½ teaspoon 

5. Fenugreek seeds – ¼ teaspoon 

6. Malabar tamarind – 3 pieces 

    Water – As required 

    Salt – As required 

7. Curry leaves – 2 sprigs 

How to prepare Mathi Curry?

1. Clean and wash the sardines thoroughly. 

2. Heat 2 tablespoons of coconut oil in a pan and sauté shallots and garlic. 

3. Add the fourth ingredient and sauté well. Once cooled, grind it into a smooth paste. 

4. Heat the remaining coconut oil in an earthen pot and splutter fenugreek seeds. 

5. Add the ground paste and sauté well. 

6. When the oil starts to separate, add the sixth ingredient and bring it to a boil. 

7. Add the fish, cover, and cook until done. 

8. Once the fish is cooked and the gravy thickens, sprinkle curry leaves and remove from heat.
