Red Rice
Leafy vegetables like spinach are highly nutritious and should be a part of kids’ daily diet in their growing age. Here is a special main course dish for their lunch box. Kids always love attractive colours and when you prepare rice with red spinach, they just love it. When you choose brown rice over white rice, they have several health benefits too.
Ingredients for Red Rice:
1. Brown rice cooked – 1 cup
2. Red spinach thoran – ½ cup
Lemon juice – 1 tsp
Baby corn cooked – ¼ cup
3. Ghee – 1.5 tea spoon
How to prepare Red Rice?
1. Heat ghee in a pan and add rice along with other ingredients.
2. Add extra salt if needed.
3. Mix all the ingredients and close the lid.
4. Cook rice in low flame for 5 minutes and then serve hot.

Note: Similar to red rice, you can prepare colourful green rice by using green spinach or palak leaves. You can simply sauté chopped leaves in ghee/oil (or a combination of both) adding a little cumin seeds and chopped ginger. Then add cooked rice to it. Decorate with curry leaves/coriander leaves/mint leaves. You can serve this rice with papad, raita or any vegetable salad of your choice.
