Traditional Wheat Unniyappam Recipe

Ingredients for Wheat Unniyappam (Gothamb Unniyappam):
- Melted and strained jaggery syrup – ¾ cup with thread-like consistency
- Wheat flour – 2 cups
Small type Palayamkodan banana (cut into pieces) – 2
Baking soda – ½ teaspoon - Thick coconut milk – As required for mixing
- Coconut oil – For frying
How to prepare Wheat Unniyappam (Gothamb Unniyappam)?
- Pour the jaggery syrup into a bowl and add the ingredients listed under the second section. Mix them well to form a smooth batter for Unniyappam.
- Transfer this mixture to a mixer jar and blend slowly, adding a little thick coconut milk at a time. Add coconut milk in batches, checking the consistency needed for the snack.
- Prepare the batter to a consistency similar to that of normal unniyappam — neither too thick nor too thin.
- Heat oil in a pan and pour one tablespoon of batter at a time. These are small unniyappams. You can also use Unniyappam pan for this purpose.
- Fry on low flame for about two minutes.
- Flip them over, increase the flame slightly, and fry for another 30 seconds before removing from the oil. It’s done so that oil is fully drained, and it also makes your appams crispier.
